Drying Process

Each part of the fish requires different treatment. For cuts, cutlets, and collar bones, fillet, backbones we employ an indoor drying system. This controlled environment allows us to maintain precise conditions such as temperature and humidity, ensuring the ideal drying for these particular parts of the fish.

Heads are dried using the same technology as Stockfish. This method allows for optimal preservation and enhances the flavor and texture of the heads.

Packing Specifications
